In many of my recipes I refer to using different amounts of your favourite nut milk. For those of you that are unfamiliar with this term, nut milk is a delicious and creamy alternative to dairy milk, made from nuts! Nut milk can be made with a combination of nuts or seeds found in your pantry such as almonds, cashews, hazelnuts or pumpkin seeds. While I do enjoy the convenience of store bought milk, enjoying it homemade means you are in control of the quality of ingredients and sweetness. By changing the amount of water, you can make it thicker to act like a cream, adding it to a warm beverage or thinner for baking or a smoothie. I remember teaching a nutrition class to my third grade students about how to make a dairy free milk at home with their parents. I will never forget the pure excitement in one little boy’s eyes when I told him he could add fruit such as a banana, resulting in a creamy banana flavoured milk!
Making homemade almond milk requires a little time and love. One of my favourite local companies in Vancouver is a product called Nuez. Lauren, the lovely mastermind behind Nuez, created a fresh-frozen concentrate that helps increase the shelf life without added preservatives. Her dairy free milk contains up to 30% more nuts than boxed store bought versions and is made with 3 or 4 basic ingredients! Since it comes as a frozen product, you simply add hot water with the Nuez concentrate to your blender and in less than 30 seconds you have the most delicious, fresh, organic nut milk. She even has seasonal flavours available like my favourite, Lush Lavender. I purchase her milk at my local farmers markets and in grocery stores around Vancouver. You can also purchase it online or tell your independent grocery stores to get this product in their freezers! Who knew the most nutritious, creamy milk could come from the freezer section?!
