Pecan Buckwheat Banana Bread

Instructions
  1. Preheat oven to 350°F and line a loaf pan with parchment paper.
  2. In a small bowl mash 3 ripe bananas. Add in melted coconut oil, almond milk, eggs and maple syrup. Mix until well combined.
  3. In separate bowl, combine all of the dry ingredients.
  4. Pour wet mixture over dry and mix until just combined. Stir in pecan pieces. (Banana bread does not like to be over mixed!)
  5. Pour batter into lined loaf pan and bake for 45-55 minutes or until toothpick inserted comes out clean.
  6. Best enjoyed warm!!
