Gluten Free Green Protein Waffles

From the moment I sent my brother a basic outline for the healthiest green pancakes I could think of, he has been hooked. Since then, the recipe has been tested and tweaked to perfection, eventually evolving into a beautiful green waffle. My brother who is a tough critic and very strict about what he puts into his body, enjoys these waffles for breakfast every single morning. Even after numerous years of green waffles, he still looks forward to his breakfast staple. I don’t even think he remembers life pre-waffles. On Sundays, he prepares an enormous batch of these delicious, protein packed waffles, stores them in the fridge, and eats them for breakfast throughout the week. These waffles have become so famous, just about everyone who sees him eating them, wants a bite, or the recipe, or both!

This recipe makes quite a few waffles (depending on the size of your iron) but I recommend making the whole batch and storing leftovers in the fridge because they are seriously addicting. They taste even better the next day either cold or warmed up. When I have people over for breakfast, this recipe is my go to! The batter is ready in your blender in less than 10 minutes, and you can assemble a waffle bar with all sorts of fresh toppings for your company to customize their plates with. Some of my favourite toppings include a fresh fruit compote with coconut whip cream and maple syrup. Waffles that are packed with healthy fats, greens and sweetened naturally don’t need a special occasion to be enjoyed. If you do not own a waffle maker, put it on your Christmas list! It’s a win-win for everybody!

In this photo we went crazy and topped our waffles with organic nut butter, melted chocolate chips, banana and homemade granola. When you slow down and take the time to make your food look beautiful, your excitement to eat increases. This helps your body absorb nutrients to their full potential, resulting in a happy, healthy belly!

Gluten Free Green Protein Waffles
Effortless, gluten free, healthy waffles made in a blender and packed with protein. If they were not green, you would never know they are made with spinach.. trust me!

Instructions
  1. Preheat waffle iron and spray with non-stick cooking spray.
  2. In a high speed blender place all of your wet ingredients in blender. Blend together to get a nice creamy liquid.
  3. Add in all dry ingredients and blend until well combined. Mixture should be very thick but pourable.
  4. If mixture is too thick, add more water to adjust until right consistency.
  5. Pour batter into waffle iron and cook until steam stops and waffles are golden and slightly crispy on the outside. Repeat with remaining batter.
  6. Top with desired ingredients and serve immediately!
