From the moment I sent my brother a basic outline for the healthiest green pancakes I could think of, he has been hooked. Since then, the recipe has been tested and tweaked to perfection, eventually evolving into a beautiful green waffle. My brother who is a tough critic and very strict about what he puts into his body, enjoys these waffles for breakfast every single morning. Even after numerous years of green waffles, he still looks forward to his breakfast staple. I don’t even think he remembers life pre-waffles. On Sundays, he prepares an enormous batch of these delicious, protein packed waffles, stores them in the fridge, and eats them for breakfast throughout the week. These waffles have become so famous, just about everyone who sees him eating them, wants a bite, or the recipe, or both!
This recipe makes quite a few waffles (depending on the size of your iron) but I recommend making the whole batch and storing leftovers in the fridge because they are seriously addicting. They taste even better the next day either cold or warmed up. When I have people over for breakfast, this recipe is my go to! The batter is ready in your blender in less than 10 minutes, and you can assemble a waffle bar with all sorts of fresh toppings for your company to customize their plates with. Some of my favourite toppings include a fresh fruit compote with coconut whip cream and maple syrup. Waffles that are packed with healthy fats, greens and sweetened naturally don’t need a special occasion to be enjoyed. If you do not own a waffle maker, put it on your Christmas list! It’s a win-win for everybody!
