Double Chocolate Chip Banana Cake

I am on a mission to make as many recipes with ripe bananas as possible. Have you noticed that it’s almost impossible to find peeled, frozen bananas in the freezer section next to the packages of blueberries and other frozen fruit available? Often, I think to myself that all grocery stores should sell ripe bananas (fresh and frozen) because lately I am only having luck finding green ones. However, yesterday, all my dreams came true. I walked into Pomme Naturals (our local grocery store in Vancouver) on my way home and found numerous brown paper bags FULL of ripe organic bananas for $1.00!! Immediately I regretted parking so far away because I knew I would be hauling an armful of these ripe, brown beauties back to my car. My freezer and counter are both now full of bananas and it only set me back $4.00! Now thats a bargain!

These bars are an incredible twist between banana bread and chocolate cake. Naturally sweetened with a few dates, each slice comes packed with bananas, oat and almond flour and lots of good quality cacao. Its important to buy organic raw unsweetened cacao powder that has not been processed or destroyed by heat meaning the nutritional profile is not affected. Cacao is a superfood naturally high in powerful antioxidants, essential minerals such as iron and magnesium, and balances hormones helping your body return to its natural state of happiness and bliss. I add a tablespoon of cacao whenever possible to boost my day: cookies, pancakes, coffee, even savoury dishes such as chilli. A little chocolate goes a long way!

Instructions
  1. Place wet ingredients (bananas, coconut oil, dates, and egg) in blender and blend until well combined. (I used vitamix)
  2. In large bowl combine dry ingredients (oat flour, almond flour, cacao, chocolate chips, flax, baking powder, salt, cinnamon). Stir until well mixed.
  3. Pour wet ingredients from blender or food processor into dry mixture and stir until just combined.
  4. Line 8x8 baking dish with parchment paper and pour batter into prepared pan until evenly spread. Top with extra chocolate chips if you wish!
  5. Bake at 350°F for 35-45 minutes or until toothpick inserted comes out clean.
  6. Let cool completely before slicing.
Recipe Notes

*I used 4 medium-large size ripe bananas.

*Swap out 1 egg for 1 flax egg to make it vegan. Just combine 1 Tbsp chia seed or flaxseed meal with 2.5 Tbsp water, mix and let set for 5 minutes to thicken.

*Store leftovers in a covered container for up to a few days or in the fridge for longer storage.
