  1. Preheat oven to 350°F. Spray or line a muffin tin with liners.
  2. In a large bowl mix dry ingredients together.
  3. In a separate bowl beat eggs together. Add in mashed banana, maple syrup, and almond milk.
  4. Combine wet and dry ingredients and mix until combined.
  5. Gently fold in the apple and carrot pieces.
  6. Using an ice cream scoop, divide batter evenly into muffin cups.
  7. Bake for 20-23 minutes.
Recipe Notes

*Use a food processor to shred your carrots and apple into smaller pieces to save time (shred carrots and apples separately).

* For a gluten free muffin, use an all-purpose gluten free flour in place of spelt
