Almond Butter Cereal Bars with Chocolate Drizzle

Most of the time I find myself buying granola bars because they have always seemed complicated and full of too many ingredients to make at home. What I don’t love about store bought bars are the ingredients I cannot pronounce along with the extended shelf life. In under 15 minutes, using staple foods in my kitchen, I made the most delicious bars, perfect for packing in your lunch or grabbing instead of that handful of Halloween candy. The best part is you don’t even need to turn on your oven for this recipe. A freezer is all you need!Ā

Almond butter, maple syrup and a hint of coconut oil give these bars a soft, chewy texture. I chose almond butter in place of peanut butter because peanuts are considered a legume and among one of the top allergen foods. Legumes contain phytic acid which impairs the absorption of minerals in our bodies. These bars are very versatile so play around with ingredients you have on hand, adding in your favourite cereal, nuts or seeds. In my opinion, the chocolate brings all of the flavours together and is essential to the recipe!

Almond Butter Cereal Bars with Chocolate Drizzle
Simple, soft and chewy, no bake granola bars. Loaded with creamy almond butter, maple syrup and fibre! Healthy, all natural and drizzled in homemade dark chocolate. Yum!

Instructions
Cereal Bars
  1. Line 8 x 8 inch or smaller baking dish with parchment paper. Pan size does not matter; it will only change the thickness of the bars.
  2. In a small sauce pan combine wet ingredients over medium-low heat. Whisk until well combined and mixture is warm but not boiling. Remove from heat, set aside.
  3. In a mixing bowl combine dry ingredients until well incorporated.
  4. Pour the warm mixture over dry ingredients and stir until all dry ingredients are well covered.
  5. Transfer mixture into prepared baking dish, pressing it down evenly and firmly with your fingers (if mixture is sticking to your hands, wet your hands slightly).
  6. Place baking dish in freezer until mixture is firm (10-15 minutes) and begin to prepare chocolate drizzle.
Chocolate Drizzle
  1. In a small sauce pan over low heat combine cacao, coconut oil and maple syrup and stir constantly until smooth.
  2. With a spoon drizzle chocolate sauce over bars until well coated.
  3. Return baking dish to freezer for 10 minutes or until chocolate is firm.
  4. Chop into snack size bars. Store in fridge or freezer for longer storage.

*Substitute peanut/nut free butter in place of almond butter
